不同风机对烤烟上部烟叶化学成分和香气物质的影响

Effects of Different Dans on Chemical Components and Aroma Substances in Upper Leaves of Flue-cured Tobacco

摘要 以云烟87烤烟品种和热泵密集烤房为试验材料,设置安装变频风机(T)与未安装变频风机(对照,CK)2个处理,对烤后烟叶香气物质的变化展开研究。结果表明:安装变频风机处理(T)烤后烟叶的碳水化合物(淀粉、还原糖、总糖)含量较适宜,而只采用高挡和低挡风速的对照处理烤后烟叶的碳水化合物含量较高。与对照相比,T处理烤后烟叶的叶绿素降解产物含量降低了23.22%,而类胡萝卜素降解产物、美拉德反应降解产物、苯丙氨酸降解产物及西伯烷类降解产物含量分别提高了40.18%、37.98%、22.77%和37.72%,中性致香物质总量提高了22.54%,烟叶评吸质量指标评价总得分提高5.95%。综合分析,热泵密集烤房采用变频风机并完善各阶段风速参数对提升上部烟叶烤后质量有较好的效果。 Using Yunyan 87 flue-cured tobacco variety and heat pump intensive curing barn as test materials,two treatments were installed with frequency conversion fans(T)and without frequency conversion fans(control,CK)to study the changes of aroma substances in tobacco leaves after curing.The results showed that the carbohydrate content(starch,reducing sugar,total sugar)of cured tobacco leaves treated(T)with frequency conversion fan was more suitable,while the carbohydrate content of cured tobacco leaves was higher in the control treatment with only high and low wind speeds.Compared with the control,the content of chlorophyll degradation products in cured tobacco leaves after T treatment decreased by 23.22%,while the content of carotenoid degradation products,Maillard reaction degradation products,phenylalanine degradation products and ciberane degradation products increased by 40.18%,37.98%,22.77%and 37.72%,respectively.The total amount of neutral aroma substances increased by 22.54%,and the total score of tobacco smoking quality indicators increased by 5.95%.Comprehensive analysis shows that using frequency conversion fans in heat pump intensive curing barns and improving wind speed parameters at each stage have a good effect on improving the quality of upper tobacco leaves after curing.
