黑灵芝干燥过程特性及色度分析

摘要 黑灵芝属于药食两用真菌,具有抗肿瘤、消炎等功效。对5种工艺条件下黑灵芝干燥过程特性及色度产生的影响进行了研究。结果表明,随干燥时间的增加,黑灵芝干基含水率、水分比、干燥速率呈先快速下降后放缓的趋势;而失重率呈先快速增加后放缓的趋势;黑灵芝反面比正面更适合评价干燥过程,而变温工艺结合亮度值和色度差可优化其干燥过程;这些结果可为黑灵芝干燥品质的提升提供指导。 Ganoderma atrum belongs to the medicinal and edible fungi,with anti-tumor,anti-inflammatory and other effects.The effects of 5 conditions on the drying process characteristics and chrominance of Ganoderma atrum were studied in this paper.The results showed that with the increase of drying time,the dry base moisture content,moisture ratio and drying rate decreased rapidly at first and then slowed down,while the weight loss increased rapidly at first and then slowed down.The negative side of Ganoderma atrum was more suitable for evaluating the drying process than the positive side,and the variable temperature process combined with brightness value and chrominance difference could optimize the drying process.These results could provide guidance for improving the drying quality of Ganoderma atrum.
