淀粉基纳米纤维膜的制备及其在副干酪乳杆菌中的保护应用

摘要 以水为溶剂制备辛烯基琥珀酸淀粉钠(OS淀粉)/普鲁兰多糖(PUL)纳米纤维膜,对不同质量比的OS淀粉与PUL纺丝溶液和纳米纤维膜进行表征。进一步将制备的绿色淀粉基纳米纤维膜用于副干酪乳杆菌的包埋,并研究其存活率及对模拟胃肠液的耐受性及储存稳定性。结果表明:随着OS淀粉质量占比的增加,纺丝溶液的黏度和电导率分别降低和增加,纳米纤维显示出更细的纤维直径;当OS淀粉/PUL质量比小于5∶5时,形成了光滑、均匀、连续的纳米纤维;OS淀粉/PUL纳米纤维膜中副干酪乳杆菌的存活率为87.95%±0.11%。纳米纤维提高了副干酪乳杆菌在胃肠道条件下的活力,且在长期储存后显示出较高的存活率,为益生菌的有效保护提供了新的途径。 Sodium starch octenyl succinate(OS starch)/pullulan(PUL)nanofiber films were prepared u-sing water as the solvent,and the spinning solutions and nanofiber membranes of OS starch and PUL with different mass ratios were characterized.The prepared green starch-based nanofiber membranes were fur-ther used for the encapsulation of Lactobacillus paracasei,and their survival rate,tolerance to simulated gastrointestinal fluid,and storage stability were investigated.The results showed that with the increase mass proportion of OS starch,the viscosity and conductivity of the spinning solution decreased and in-creased,respectively,and the nanofibers showed finer fiber diameters.When the mass ratio of OS starch/PUL was less than 5:5,smooth,uniform,and continuous nanofibers were formed.The survival rate of Lactobacillus paracasei in OS starch/PUL nanofiber mats was 87.95%±0.11%.The nanofibers im-proved the viability of Lactobacllus paracasei under gastrointestinal conditions and it showed high survival rate after long-term storage,providing a new way for the effective protection of probiotics.
