摘要
本文研究了盐湿驴皮在低温低湿(10℃,45%RH)、中温中湿(20℃,65%RH)和高温高湿(30℃,75%RH)3种条件下的存储稳定性。结果显示,虽然存储条件对盐湿驴皮中的盐含量无明显影响,但会影响其水分活度,进而影响微生物的生长和蛋白质的腐败变质程度。当温度不超过20℃且相对湿度不超过65%时,盐湿驴皮的水分活度保持在0.75以下。在此条件下,微生物生长受到限制,盐湿驴皮中的菌落总数不超过14×10^(4)CFU/g,蛋白基本不会发生腐败变质,可稳定存储6个月以上。然而,在高温高湿条件下,盐湿驴皮的水分活度超过0.80,微生物繁殖迅速,导致蛋白快速腐败变质。因此,盐湿驴皮的存储建议选择阴凉干燥环境,并严格避免高温高湿条件。该研究为盐湿驴皮的稳定储存提供了科学指导。
This study investigated the storage stability of wet-salted donkey hide under three storage conditions:low temperature and humidity(10℃,45%RH),medium temperature and humidity(20℃,65%RH),and high temperature and humidity(30℃,75%RH).The results show that although storage conditions have negligible influ-ence on the salt content of wet-salted donkey hide,they obviously affect water activity,which in turn influence micro-bial growth and protein spoilage levels.When the temperature remains below 20℃and the relative humidity does not exceed 65%,the water activity of wet-salted donkey hide is maintained below 0.75,effectively limiting microbia growth to a maximum of 14×10^(4)CFU/g.Under these conditions,protein degradation is effectively prevented,enab-ling stable storage for over six months.However,under high temperature and humidity conditions,the water activity of wet-salted donkey hide exceeds 0.80,leading to rapid microbial proliferation and subsequent protein degradation.Therefore,storing wet-salted donkey hide in a cool and dry environment while strictly avoiding high temperature and humidity conditions is recommended.This study provides scientific guidance for the stable preservation of wet-salted donkey hide.
