摘要
为了研究日粮中添加绿豆提取物对环江香猪生长性能、肌肉品质和风味的影响,试验将120头健康、体重5 kg左右的环江香猪保育仔猪分为4组,分别为对照组、试验Ⅰ组、试验Ⅱ组、试验Ⅲ组,每组3个重复,每个重复10头(公母各半),对照组仅饲喂基础日粮,试验Ⅰ组、试验Ⅱ组、试验Ⅲ组分别饲喂添加1000,2000,4000 mg/kg绿豆提取物的基础日粮,预试期3 d,正试期28 d。测定各组试验期间的生长性能指标(末重、平均日增重、平均日采食量和料重比);试验结束后,每个重复随机选取2头试验猪(公母各半)进行屠宰,测定肌肉品质性状指标(肉色值、系水力、剪切力、熟肉率、pH45 min值、pH24 h值)和肌肉风味氨基酸含量。结果表明:与对照组相比,试验Ⅰ组的各项指标均差异不显著(P>0.05);试验Ⅱ组的末重、平均日增重、肉色值及天冬氨酸、脯氨酸含量显著升高(P<0.05),料重比显著下降(P<0.05),但平均日采食量、系水力、剪切力、熟肉率、pH45 min值、pH24 h值和其他风味氨基酸含量差异不显著(P>0.05);试验Ⅲ组的末重、肉色值及天冬氨酸、脯氨酸含量显著升高(P<0.05),平均日增重、平均日采食量、料重比、系水力、剪切力、熟肉率、pH45 min值、pH24 h值和其他风味氨基酸含量差异不显著(P>0.05)。总体来看,试验Ⅱ组的末重、平均日增重、肉色值最高,料重比和剪切力最低;试验Ⅲ组的平均日采食量、系水力、熟肉率、谷氨酸含量、天冬氨酸含量、丙氨酸含量、甘氨酸含量、脯氨酸含量、苏氨酸含量、丝氨酸含量、呈鲜味氨基酸总量、呈甜味氨基酸总量和风味氨基酸总量最高。说明日粮中添加2000 mg/kg和4000 mg/kg的绿豆提取物可有效提高环江香猪的生长性能,改善其肌肉品质和风味。在本研究的试验条件下,绿豆提取物的推荐添加量为2000 mg/kg。
In order to study the effects of Mung bean extract added to diet on growth performance,muscle quality and flavor of Huanjiang Xiang pigs,in the experiment,one hundred and twenty healthy Huanjiang Xiang piglets weighing about 5 kg were selected and divided into four groups:control group,test groupⅠ,test groupⅡ,and test groupⅢwith three replicates in each group and 10 piglets(half male and half female)in each replicate.The control group was fed only the basal diet,while the test groupsⅠ,ⅡandⅢwere fed diets supplemented with 1000,2000 and 4000 mg/kg of Mung bean extract,respectively.The pre-test period was 3 d,and the main test period was 28 d.The growth performance indexes(final weight,average daily weight gain,average daily feed intake and feed-to-weight ratio)during the test period of each group were measured,After the test,two test pigs(half of male and half of female)were randomly selected from each replication to be slaughtered,and the indexes of muscle quality traits(meat color value,tethering force,shear force,maturity rate,pH_(45 min)value,pH_(24 h)value)and the amino acid content of muscle flavor were measured.The results showed that compared with the control group,all the indexes in the test groupⅠwere not significantly different(P>0.05).Final weight,average daily gain,meat color,aspartic acid and proline contents in the test groupⅡwere significantly increased(P<0.05),and the feed-weight ratio was significantly decreased(P<0.05),but there were no significant differences in average daily feed intake,water holding capacity,shear force,maturity rate,pH_(45 min)value,pH_(24 h)value and other flavor amino acid contents(P>0.05).Final weight,meat color value,aspartic acid and proline contents in the test groupⅢwere significantly increased(P<0.05),and there were no significant differences in average daily gain,average daily feed intake,feed weight ratio,water holding capacity,shear force,maturity rate,pH_(45 min)value,pH_(24 h)value and other flavor amino acid contents(P>0.05).Overall,test groupⅡhad the highest final weight,average daily gain,and meat color value,and the lowest feed-to-weight ratio and shear force.Test groupⅢhad the highest average daily feed intake,water holding capacity,maturity ratio,glutamate content,aspartic acid content,alanine content,glycine content,proline content,threonine content,serine content,total fresh tasting amino acids,total sweet tasting amino acids and total flavoring amino acids.The results indicated that the addition of 2000 mg/kg and 4000 mg/kg of Mung bean extract to diet could effectively improve the growth performance,muscle quality and flavor of Huanjiang Xiang pigs.Under the experimental conditions of this study,the addition of 2000 mg/kg of Mung bean extract was reconmended.
