影响羊肉品质因素的研究进展

摘要 羊肉风味独特,营养丰富,是一种深受广大消费者喜爱的肉类。随着人民生活水平的不断提高,消费者对羊肉的需求也逐渐从追求数量转变为重视品质,羊肉品质逐渐成为影响羊肉消费水平及肉羊产业发展的重要因素。评价羊肉品质主要依据持水能力、肉色、营养价值和pH值等指标,它们直接或间接反映羊肉的整体品质。对影响羊肉品质的因素进行综合分析,对进一步深入改良和提升肉品质,提高优质羊肉的生产水平具有重要意义。文章系统地综述了品种、年龄、性别、营养、饲养管理、屠宰、贮藏和加工等因素对羊肉品质影响的研究进展,旨在为羊肉品质的改良提供参考。 Mutton has a unique flavor and rich nutrition,and is a kind of meat that is deeply loved by consumers.With the continuous improvement of people's living standards,consumers'demand for mutton has gradually changed from the pursuit of quantity to the emphasis on quality.The quality of mutton began to affect the level of mutton consumption and the development of the mutton sheep industry.The evaluation of mutton quality is mainly based on indicators such as water-holding capacity,meat color,nutritional value and pH value,which directly affect or indirectly reflect the overall quality of mutton.It is of great significance to comprehensively summarize the factors affecting mutton quality to further improve and enhance the quality of meat and improve the production of high-quality mutton.This paper systematically reviewed the research progress of influencing factors of breed,age,gender,nutrition,feeding management,slaughter,storage and processing on mutton quality,aiming to provide reference for the improvement of mutton quality.
