摘要
对巴西鲷成鱼肌肉中的水分、蛋白质、脂肪、灰分、硒含量及氨基酸、脂肪酸组成进行了分析,结果表明:巴西鲷肌肉蛋白质和脂肪含量均较高,分别为18.85%和6.95%,硒含量为260.1μg/100g(干重),必需氨基酸占氨基酸总量的48.43%,高度不饱和脂肪酸含量占脂肪酸总量的26.65%。
Contents of moisture,crude protein,crude fat,crude ash,selenium and composition of fatty acids and amino acids in the muscle of adult curimbata(average body weight:1200g /ind)were analyzed.The results showed that contents of crude protein,crude fat and selenium were 18.85%,6.95%and 260.1μg /100g (dry matter)respectively and that the content of essential amino acids accounted for48.43%of total amino acids and that the highly unstaturated fatty a cids(HUFA)in the fatty acids reached as high as 26.65%.
