啤酒发酵是一个极其复杂的生化放热反应 ,其温度控制对象具有严重的非线性、时变性、结构参数变化的不确定性。全面、详细地分析了控制对象特点 ,控制要点及难点 ;深入探讨了应用于啤酒发酵过程温度的Smith预估补偿控制、模糊控制、神经网络控制、仿人智能等先进控制策略。展望了啤酒发酵过程温度控制策略的发展前景。
The beer fermentation is an extreme complex biochemical response of heat release.Temperature object controlled has a serious nonlinear,time change and uncertainty of structural parameter.This paper analyses controlled object characteristics,control key points and difficulties in detail.Meanwhile,the article researches temperature advanced control strategies for fermentation process of beer,such as the Smith arithmetic,fuzzy control,fuzzy-neural network and simulating human intelligent control.The development prospect of temperature control strategies will be very bright in fermentation process of beer.
