摘要 黄曲霉毒素(Aflatoxin,简称AF)是由某些真菌产毒菌株产生的次生代谢产物,具有极强的毒性、致癌性、致畸性,在自然界中普遍存在。简要概述了黄曲霉毒素的毒性、理化性质、分布与产生的条件及对人体的危害,就影响黄曲霉毒素合成的几种重要环境因子进行了综述。 Aflatoxin(Aflatoxin,referred to as AF) is produced by certain fungal strains of germs generated bysecondary metabolites,is highly toxic,carcinogenic,teratogenic,widespread in nature.This article provides a brief overview of the toxicity of aflatoxin,physicochemical properties,distribution and generating conditions and the harm to human body,effects of aflatoxin synthesis of several important environmental factors are reviewed.
