摘要
微波真空冷冻干燥技术作为交叉学科发展的产物在食品加工中能保持食品的色、香、味,并在储藏方面有重要的应用。微波真空冷冻干燥具有干燥速度快,能量效率高,易于控制被干燥物料的温度,适合于热敏性物质的干燥,同时具有杀菌消毒功效等优点,因而在食品和医药加工等行业有着广阔的应用前景。本文主要就微波在真空冷冻干燥中的应用及其中存在的一些问题进行研究和讨论。
Microwave vacuum freeze-drying is a new drying technolog y.It is an interdisciplinary science and has been applied and studied in many fields.It has been used for decades in food processing industries for efficient long -term preservation of final products.By microwave vacuum freeze -drying no substantial differences were observed as far as colors,taste,aroma and shape were concerned of the products.Based on the investig ation of the present situation of the microwave freeze -drying technolog y,process equipment and theory studies,the existing questions have been discussed.For industrial purposes,it is necessary to investig ate and desig n the operation parameters of microwave drying processes.
