三种马尾藻的营养组成分析

Nutritional Constituents of Three Kinds of Sargassum

【目的】为扩大马尾藻应用范围,提高其开发利用价值,对山东荣成鼠尾藻、海黍子及铜藻等3种马尾藻的主要营养组成及功能活性成分物质进行研究。【方法】测定分析马尾藻中的蛋白质、粗脂肪、粗纤维、不溶性膳食纤维、氨基酸、微量元素、褐藻胶、褐藻淀粉、岩藻黄素等成分的含量。【结果】3种海藻的微量元素含量丰富,其他物质的含量如下:粗蛋白14.1%~19.1%,粗脂肪1.8%~2.5%,粗纤维5.4%~9.6%,不溶性膳食纤维14.7%~19.6%,褐藻胶12.4%~26.2%,褐藻淀粉0.04%~0.38%,岩藻黄素0.26~0.74mg/g,褐藻多酚1.34~6.48mg/g,甘露醇0.43%~0.45%。【结论】3种海藻属于蛋白质适中、脂肪低、膳食纤维高、其他活性成分较高的藻类,可作为良好的食品添加剂及海藻活性成分提取的原料。

【Objective】To extend the application fields and increase utility value of Sargassum,the primary composing components and functional components of three kinds of Sargassum collected from Rongcheng coastal zone were studied.【Methods】The contents of the protein,crude fats,crude fiber,insoluble dietary fibre,amino acids,trace elements,alginate,laminaran and fucoxanthin were measured and analysised【Results】Trace elements in the three kinds of Sargassum were as follow,protein 14.1% ~19.1%,crude fats 1.8% ~2.5%,crude fiber5.4%~9.6%,insoluble dietary fibre 14.7%~19.6%,alginate 12.4%~26.2%,laminaran0.04%~0.38%,fucoxanthin 0.26~0.74mg/g,algae polyphenol 1.34~6.48mg/g,mannite0.43%~0.45%.【Conclusion】The three kinds of Sargassum were the algae with moderate protein,low fat,high insoluble dietary fibre and high active composition.They could be used as raw materials of food additives and active components.
