摘要 用高压液相色谱同步分析测定了用固定化多酚氧化酶生化反应器生产的茶色素产品的茶黄素和儿茶素的含量和组成。产品的茶黄素总量为78.94%,其中TF5.89%、TF3G14.54%、TF3’G11.17%、TFDG47.34%。产品中残留的儿茶素为13.83%,其余7.23%为茶红素等成分。 Abstract The composition and content of tea catechins and theaflavins in the tea pigment obtained from tea polyphenols catalyzed with immobilized polyphenol oxidase isolated were measured simultaneously using Shimadzu LC-10A high-pressure liquid chromatograph (HPLC). The tea pigment contained 78. 94% of theaflavins which consisted of theaflavin (TF) 5. 89 %, theaflavin-3-gallate (TF3G) 14.54%, theaflavin-3'-gallate (TF3'G) 11.14%, and theaflavin-3, 3'-digallate (TF3,3'G) 47. 34%. The residual catechins in the pigment was 13. 83%, and the other 7. 23% was thearubigins and some other compounds.
