不饱和脂肪酸在瘤胃氢化的微生物学机制研究进展 被引量:15

摘要 反刍动物副产品如肉、奶中的不饱和脂肪酸的含量与其在瘤胃内的氢化程度有关,瘤胃内微生物主要参与不饱和脂肪酸在瘤胃内的氢化过程。综述了反刍动物日粮中常见的不饱和脂肪酸的种类、瘤胃中参与脂肪酸氢化的主要微生物群落、不饱和脂肪酸在瘤胃微生物参与下的氢化代谢途径和日粮中的不饱和脂肪酸对瘤胃微生物区系的影响,为提高不饱和脂肪酸在反刍动物肉、奶中的含量提供调控的技术手段。 The content of unsaturated fatty acid in ruminant products such as meat and milk is related to the biohydrogenation in rumen,and rumen microbe play a major role in the process of biohydrogenation.In the following sections we would provide background on the common unsaturated fatty acid in ruminant diet,the main microbe re-fer to the biohydrogenation of unsaturated fatty acid,the metabolic pathway of unsaturated fatty acid and its effect on the rumen microbe.It maybe provide a useful tool to improve the content of unsaturated fatty acid in ruminant meat and milk.
