摘要
牛乳营养全面,含有多种微量生物活性成分,在机体免疫防御、生长发育、生理调节等方面都具有非常重要的作用。其质量安全直接关系到百姓健康和社会稳定,牛乳品质检测程序是首先采用进行初步评价,再通过理化指标和微生物指标检测对牛乳品质做进一步判断。而乳蛋白含量的变化主要受营养水平(氨基酸和能量)、内分泌系统以及乳腺中众多参与蛋白质代谢的调控因子的调控。因此,对牛乳品质检测方法的研究进展与奶牛乳腺细胞内乳蛋白的合成调控与影响其品质的主要因素进行了简要综述。
Milk is fully nutritious and contains a variety of microbiological active ingredients that plays a very important role in the body’s immune defense,growth and development,physiological regulation and so on.The change of milk protein content is mainly regulated by nutritional level(AA and energy),endocrine system and many factors involved in protein metabolism in the mammary gland.Therefore,the research progress of milk quality detection methods,the regulation of lactoprotein synthesis in dairy cow mammary gland and the main factors that affect their quality are briefly reviewed.
