摘要
运用HACCP原理 ,分析了速冻油炸葱生产过程各环节可能存在的潜在安全危害 ,找出关键控制点 ,制定控制措施 。
According to the HACCP, We studied the potential food hazards in process of production of frozen fried shallots. Found out the critical control points and worked out the control measures. That proved the HACCP is offective and workable in frozen fried shallots processing.
