伊犁鹅及其与豁眼鹅杂交后代屠宰性能、肉品质和抗氧化性能的比较研究 被引量:3

摘要 为了给今后利用伊犁鹅进行品种改良提供参考依据,试验随机选取健康状况良好、体重相近、2岁的伊犁鹅及其与豁眼鹅杂交后代(杂交鹅)各10只(公母各半),进行屠宰性能、肉品质和肌肉抗氧化性能指标的测定与分析。结果表明:伊犁鹅公鹅胸肌率显著高于杂交鹅公鹅(P<0.05),半净膛率和全净膛率显著或极显著高于伊犁鹅母鹅(P<0.05或P<0.01);杂交鹅公鹅的全净膛率和半净膛率均极显著高于杂交鹅母鹅(P<0.01)。伊犁鹅母鹅肉色极显著高于杂交鹅母鹅(P<0.01);屠宰后24小时时,伊犁鹅公鹅的腿肌肉色显著高于杂交鹅公鹅(P<0.05);屠宰后2小时时,伊犁鹅母鹅的胸肌pH值极显著高于杂交鹅母鹅(P<0.01)。伊犁鹅母鹅胸肌的丙二醛(MDA)含量显著低于杂交鹅母鹅(P<0.05),伊犁鹅公鹅腿肌的MDA含量显著低于杂交鹅公鹅(P<0.05);伊犁鹅母鹅胸肌的总抗氧化能力(T-AOC)显著高于杂交鹅母鹅(P<0.05),其他指标均差异不显著(P>0.05)。说明在相同的饲养管理和营养水平下,伊犁鹅与杂交鹅比较,伊犁鹅产肉性能高、肉质较好、抗氧化能力强。 In order to provide a reference for the future improvement of Yili geese,2-year-old Yili geese(half male and half female)and hybrid geese(half male and half female)with healthy and similar weight were randomly selected for the determination of slaughter performance,meat quality and muscle antioxidant index in the experiment.The results showed that the chest muscle rate of male Yili goose was significantly higher(P<0.05)than that of male hybrid geese.The percentage of semi-purification and total purification in male Yili geese was significantly higher(P<0.05)than that of female Yili geese.The percentage of semi-purification and total purification in male hybrid geese was significantly higher(P<0.05)than that of female hybrid geese.The meat color of female Yili geese was significantly higher(P<0.05)than that of the female hybrid geese.At the 24 hours after slaughter,the leg muscle color of the male Yili geese was significantly higher(P<0.05)than that of the male hybrid geese.At the 2 hours after slaughter,the pH of the pectoral muscle in female Yili geese was significantly higher(P<0.05)than that of female hybrid geese.The content of malonaldehyde(MDA)in female Yili goose pectoralis muscle was significantly lower(P<0.05)than that in female hybrid goose.The MDA content of male Yili goose leg muscle was significantly lower(P<0.05)than that of male hybrid goose.The total antioxidant capacity(T-AOC)of the female Yili goose pectoral muscle was significantly higher(P<0.05)than that of female hybrid goose.The results indicated that the meat yield,meat quality and antioxidant ability of Yili geese were higher than that of hybrid goose under the same feeding management and nutrition conditions.
