清香型白酒香气成分的Logistic模型设计 被引量:1

摘要 以清香型白酒为样本,对其香气成分进行分析。利用SAS软件,采用Logistic回归方法建立了清香型白酒香气成分的数学模型,定量地分析了各微量成分对清香型白酒香型特征的影响,并进行模型统计分析,充分说明清香型白酒香型特征与乙酸乙酯有显著关系,而与乳酸乙酯无显著关系。 In this paper,Fen-flavor liquor was selected and its aroma components were analyzed. By SAS software and Logistic regression method,the mathematical model of Fen-flavor liquor with aroma components was established,which analyzed the influence of each trace component of Fen-flavor liquor by quantitative analysis. And the statistical analyzed of the model was made,which showed Fen liquor flavor characteristics had a significant relationship with ethyl acetate,and no significant relationship with ethyl lactate.
