脉冲电场中西瓜汁杀菌钝酶效果分析 被引量:14

摘要 利用脉冲高压电源对反应器中的西瓜汁施加脉冲电场处理 ,测定了电场强度为 2 0、30、4 0 k V/cm和不同处理时间情况下西瓜汁的细菌含量和酶的活性 ,试验发现 ,脉冲电压对于西瓜汁的杀菌效果比较明显 ,试验 30 s后平均细菌数下降到 2 .5 %~ 10 % ;同时 ,脉冲电场对酶的活性有一定影响 。 Watermelon was treated with pulsed electric fields in a pilot plant by high voltage pulsed power supply. By the test, electric field strengths of 20, 30 and 40 kV/cm and treatment times of 0 5, 1, 5, 10 minutes were used. Pulsed electric field made obviously effect on sterilization. Total mount of bacteria decreased to 2 5%~10%. Pulsed electric field also has the effect on the activities of enzyme, but it was not sure if the effect is positive or negative.
