摘要
本文概述了国内外应用壳聚糖酶制备壳寡糖的研究开发现状,着重阐述了酶法生产壳寡糖的工艺过程和测定方法。
In this paper , we described the current research and development situation for preparation of chitooligosaccharides by using chitosanase in domestic and overseas , mainly introduced the technology processing and determination method of producing chitooligosaccharides with enzymes .
