摘要
主要研究了利用蛋白酶提取米糟中蛋白质的工艺。通过正交试验,发现最佳发酵条件为酸性蛋白酶、接酶量为2%、酶解时间为3h。
In this paper,we studied on extraction technology of protein from rice dregs using protease.The results showed that the optimal conditions as follows:2%acidic protease and the fermentation time was 3 hours.
