摘要
介绍了用高压脉冲对液态食品进行灭菌的方法及试验结果,并由电镜分析探讨了高压脉冲灭菌的机理。为进一步在食品加工工艺中实际应用这种灭菌方法作了理论准备。
Destruction of bacteria in liquid foods has been performed using high voltage pulse. This paper describes the method and some results. Based on the observation of destroyed cells by electron microscope, the mechanism of killing bacteria is discussed.
