摘要 味精是以淀粉或糖质为原料通过微生物发酵法生产出来的一种谷氨酸的钠盐,是自然界存在的氨基酸的一种。对于它的安全性,在国际上,特别是日本曾做过大量工作,以翔实的、科学的数据证实了食用味精是安全的。 联合国粮农组织和世界卫生组织食品添加剂法规委员会第19届会议也宣布结论:“对味精每人每天摄入量不需作任何规定”。时隔10多年,至今还有一部分消费者对味精的安全性存在疑虑。为了进一步证实“味精的营养与安全”,中国发酵工业协会组织味精行业,在中国中医研究院的大力支持下,对我国味精产品进行了《大鼠长期毒性试验》,通过试验,再一次证实了食用味精是安全的。 Monosodium glutamate is a glutamic acid sodium salt made from starch or sugar by microbial fermentation. It is one kind of amino acid existed in nature. Many researchers in the world, especially in Japan, have done a lot of works on its safety. The researchers verified that it is safe for man to eat monosodium glutamate based on detailed and scientific data. The 19th Meeting of Food and Agriculture Organization of the United Nations and Food Ingredients Regulation Committee of World Health Organization also declared their conclusion that 'It is no need to set any regulations on acceptable daily intake for a man for monosodium glutamate per day'. Ten years passed, there are still some consumers have doubts on the safety of monosodium glutamate. In order to ascertain the nutrition and safety of monosodium glutamate, China Fermentation Industry Association and some monosodium glutamate producers, cooperated with China Research Institute of Chinese Medicine, carried out Mouse Long Term Toxicity Experiment. Through this experiment, the safety of monosodium glutamate has been verified too.
