乳化剂的最大用户在发达国家是面包,因为这是它们的主食,我国乳化剂发展起步较晚,但经过近十年发展,不论在品种产量方面,大体能适应市场的需要,但有些品种也出现供大于求的局面,“十五”期间应着力加强乳化剂,包括增稠剂品质改良剂的应用研究,面向中国式主食和能进入一日三餐的副食品和调料的应用研究,这样我国的乳化剂将有广阔的发展前景。
The biggest user of emulsifier is bread in developed countries since bread is the staple ha in these coun- tries. The production and application of emulsifier started late in China. Through development in recent ten years, the preduction of emulsifier can meet the needs of market on specification and production volume. The supply of some spec- ifications of emulsifier is greater than the demand in market. More attention should be paid on the application and re- search of emulsifier (including thickener and quality improver) during The Ten-Five Year Plan.
