New Resources of Enzyme in Food Industry

摘要 本文对近年来在食品工业中应用的新酶源或酶的新用途以及有希望应用的酶源作了一番综述。这些酶包括 :甲壳素脱乙酰酶、溶菌酶、甲壳素内切酶、葡聚糖酶、葡萄糖氧化酶、乳过氧化物酶、葡萄糖氧化酶—过氧化氢酶复合体系、己糖氧化酶、超氧化物歧化酶、谷胱甘肽硫 转移酶、辣根过氧化物酶、黄曲霉毒素脱毒酶、酸性磷酯酶、尿素酶、植酸酶、生产低聚糖的酶类、转谷氨酰胺酶、过氧化物酶、及漆酶、多酚氧化酶等。 Food enzyme engineering is one of the important parts in food biotechnology.The application of enzyme is very extensive.it is used in almost all food industries.This essay gave a summary on the application of new enzyme resources or the new application of enzyme and other enzyme resources which have possibility of being used in food industry.These are lysozyme, dextranase, glucose oxidase, lactoperoxidase, hexose hydrogenase, SOD, horse-radish peroxidase, urease, phytase, holoside, peroxidase, laccase and peroxidase.
