Importance of wheat starch and gluten producing was indicated. The historical classic processing and present development of producing of wheat starch and gluten were briefly narrated. And new processings were contrasted with old processings.The processing of Westfalia was particularly depicted. On the basis, we pointed out the keys of wheat starch and gluten producing and discussed them.
