摘要
研究了小麦淀粉经环氧氯丙烷交联和醋酸酐酯化修饰处理后粘度特性的变化,指出了交联剂用量、交联pH、交联时间、酯化剂用量、酯化pH和反应温度对结果的影响,并得出获得高粘度淀粉的最佳实验条件为交联剂用量0 27%,交联时间3 3h,交联pH10,反应温度25℃,酯化剂用量6%,酯化pH8 9.
The viscosity properties of wheat starch modified by epichlorohydrin and acetic anhydride were studied.The crosslinking agent and esterizing agent dosage,pH of crosslinking and esterification,crosslinking time and reaction temperature can affect the results.It showed that the optimal conditions for making high viscosity starch were 027%(g/g) epichlorohydrin,33 h for crosslinking reaction,crosslinking pH 10,temperature 25℃,6% of esterizing agent at pH89.
