'天上神仙府,世上帝王家',说起宫廷御膳,不少人脑海中最先浮现的大都是'满汉全席''山珍海味'等字样。辽宁作为'满汉全席'和清代宫廷御膳烹饪技法的发源地,是宫廷御膳的一个重要分支,这里的名厨大家藏龙卧虎。宫廷御膳的迷人之处,百闻不如一见,还是跟随本刊记者走进第三代传承人李鸿志老先生的“宫廷御膳工作室”,听真正的“行家”为我们“讲菜”吧。
Liaoning province is the very place where“the Complete Delicacies of the Manchu and the Han”and the Qing court cuisine originated.The court cuisine represents both the highest standard of all the cuisines in history and the best food produced by royal chefs.Now the once rare and precious food materials are no longer the privileges monopolized solely by the few,but chefs who have inherited authentic skills remain a rarity.As the master of Chinese cuisine and the third generation inheritor of the court cuisine,Li Hongzhi refused to take himself as a master.“I don’t like to be called master.I want to be a chef,that’s all.I am happy when they like my dishes.What I am thinking is how to make the court cuisine available for more customers and how to make them satisfied and delighted with the royal food.We must hand over the cuisine to the next generation,”he said.
