紫薯花色生鲜肠的研制

摘要 将紫薯浓缩汁添加到香肠原料中,产品配方为:原料肉1500 g,淀粉150 g,水600 g,紫薯浓缩汁150 g,料酒105 g,干肠粉3 g,五香粉1.2 g,盐3 g,大豆分离蛋白30 g,异抗坏血酸钠0.75 g。试验结果表明:产品风味独特,营养丰富,值得进一步开发利用。 The concentrated juice of purple sweet potatoes was added in the raw material of sausage,and the product formula was raw meat 1500 g,starch 150 g,water 600 g,the concentrated juice of purple sweet potatoes 150 g,cooking wine105 g,dry sausage powder 3 g,five spice powder 1. 2 g,salt 3 g,SPI 30 g,sodium erythorbate 0. 75 g. The result of experiments show that the product bears unique flavor,rich nutrition and it is worthy of further study and development.
