摘要
以山楂、胡萝卜、白砂糖为原料,选用酵母菌、醋酸菌为发酵剂,通过单因素实验、正交试验和理化测定的方法,确定产品的最佳配方和工艺,研制出风味独特、色泽金黄透亮、滋味醇和、富含营养的山楂胡萝卜保健果醋饮料。
Taking hawthorn,carrot,white sugar as raw material and selecting yeast,acetate bacteria as starter,this paper determined the best formulation and process through the method of single factor test and orthogonal test and physiochemical determination,then developed hawthorn and carrot health vinegar beverage which bears a unique flavor,golden and bright color,pure and mild taste and rich nutrition.
