介绍全割法取醋工艺流程和操作方法,着重对操作要点进行全面阐述,提出在液态深层发酵制醋中应用全割法取醋,可提高原料出品率,降低生产成本,提高经济效益,旨在为液态深层发酵制醋生产企业提供一条创新增效之路。
This paper introduced the process and operation method of full-cut method to take the vinegar,focusing on the comprehensive elaboration of operation points. It put forward that the application of full-cut method in vinegar production by submerged fermentation can improve yield,reduce production costs,increase economic efficiency,intended to provide innovation and efficiency raising way for the submerged fermentation production enterprises.
