摘要
苏州菜是中国四大名菜江苏菜的重要组成部分,特色鲜明,名闻四海。苏州地处长江中下游的太湖平原,自然生态环境优越,境内水网密集,江河湖泊众多,物产资源特别是水产资源丰富,盛产各类鱼虾蟹等。因此,苏州菜肴中鱼虾蟹原料美食历史悠久,地位显著。
As a part of Jiangsu regional dishes and with its special characteristics,Suzhou local dish ranked as one of the important part of 4 Main Regional dishes in China.From the geographic position,Suzhou situated in the south of Jiangsu Province and located in the lower reaches of the Yangze River,which provide specialty to Suzhou with numerous lakes,easy access to transportation,rich resource,especially waterborne species,for example,fish,shrimp,crab,etc.Therefore,fish,shrimp and crab in Suzhou cuisine has a long history of raw materials and holds a notable position.
