佛山市居民消费和食用水产品现况分析 被引量:1

Analysis on the Status Quo of Aquatic Products Consumer and Consumption of Foshan Residents

摘要 目的本文阐述了佛山市居民消费和食用水产品的现况,并进一步分析居民的家庭结构以及居住地对消费和食用水产品习惯的影响。方法对被调查居民的水产品消费频次、地点、种类和食用习惯构成比进行统计分析。结果被调查居民每周消费水产品1~2次的占60.00%,每次消费水产品重量在0.5kg^1kg的占46.00%。居民首选在农贸市场购买水产品。新鲜程度是消费水产品最为重要因素(81.00%),其次是安全卫生和价格因素。在食用习惯上,选择立即食用的占71.50%,烹饪方法首选清蒸,次选煲汤。不同成员数的家庭在购买水产品后食用间隔时间和处理方式具有统计学差异。另外,城镇居民更倾向于购买后冷藏处理,而农村居民购买后室温放置几小时。结论水产品在佛山居民的日常膳食中占较高比例,人们对其营养价值有一定的认知,但农村居民对水产品的营养卫生处理的认知还有待加强。 Objective To describe the status quo on consumer and consumption of aquatic products in Foshan City, and further analyze the effect of family structure and residents living for consumption and eating habits. Methods The frequency, location, type and eating for aquatic products were analyzed. Results The residents who consumed aquatic products 1-2 times weekly accounted for 60.00%, and the residents' consumption weight was among 0.5kg to 1kg each time accounted for 46.00%. The residents mainly chose to shop in Farm Market. The most important consideration for consumption was freshness, which accounted for 81.00%, followed by safety and price factors. On eating habits, 71.50% of residents chose immediately eating, and steam cooking method was the first choice, soup cooking was second. The difference of number of family members had statistical significance on the way to processing aquatic products. In addition, urban residents were more likely to refrigerate processing the aquatic products, but rural residents liked to process after a few hours placed in the ambient temperature. Conclusion Aquatic products are a major food which account for a large proportion of their daily diet of residents in Foshan. They alsorecognize nutritional value of fishery products.But education regarding food safety is needed for rural residents in terms of appropriate waysto storage aquatic products.
