摘要
要研究了利用微波技术钝化小麦胚芽中解脂酶的方法。试验结果表明,与不进行灭酶处理相比,微波灭酶大大延长了小麦胚芽的存放时间;与热灭酶相比,微波灭酶大大缩短了灭酶处理时间,并且改善了灭酶效果。
Inactivation of lipase in wheat g erm by microwave was studied in this paper .The results showed that microwave treatment could g reatly extend storag e time of wheat g erm;compared with heat inactivation,microwave treatment had much shorter treatment time and improve enzyme inactivation a g reat deal.
