摘要
采用夹泥发酵生产多甑双轮底酒,结果表明,“多甑双轮发酵”不仅提高了窖池特级酒单产(由原15~40kg提高到40~60kg)和总产(由原2.67t提高到6.04t),而且己酸乙酯的含量得到了大大提高(由原271.1mg/100ml提高到450.98mg/100ml),己乳比、己乙比更加协调。
The technique of interlayer mud fermentation was applied in the production of double bottom fermentation liquors and the results suggested that the application of the technique of double bottom fermentation for several steamers of fermented grains could not only increase single pits output from15?40kg to40?60kg and total output from2.67t to6.04t but also improve the ethyl caproate contents from271.1mg/100ml to450.98mg/100ml.Besides,the ratio of caproic acids and lactic acids and the ratio of caproic acids and esters became more harmonious.(Tran.by YUE Yang)
