摘要
以绿芽茶为对照 ,对不同色度的紫芽茶生化成分进行了对比分析 ,选用富含花青素的紫芽茶为主要原料 ,辅以甘草、甜叶菊、蜂蜜等原料 ,经冷、热水分别浸提、超滤、调配等工序研制开发出口感清爽、风味俱佳 ,集保健、趣味性与经济价值于一体的紫芽茶保健饮料。
With green bud-tea as the control, the biochemical components of purple bud-tea with different colour were compared. Purple bud-tea rich in anthocyanin was extracted in cold and hot water, ultra-filtered and formulated with the addition of liquorice and honey to give a health beverage characterized by refreshing mouth-feel, nice flavour and health-beneficial effects.
