养殖史氏鲟幼鱼的含肉率和鱼肉营养成分分析

Approximate composition in muscles and relative dressed weight in farmed sturgeon Acipenser schrenckii juvenile

测定了史氏鲟Acipenserschrenckii的含肉率和鱼肉营养成分。结果表明,其含肉率为(30 82±1 22)%;4种鲜味氨基酸(天门冬氨酸、谷氨酸、甘氨酸、丙氨酸)总质量分数为5 40%,占氨基酸总量的35 84%;8种人体必需氨基酸总质量分数为6 45%,占氨基酸总量的42 79%。

Approximate composition in muscles and relative dressed weight were determined in juvenile farmed sturgeon Acipenser schrenckii. The percentage of dressed weight in total body weight was (30.82±1.22)%. Four delicious amino acids aspartic acid, glutamic acid, glycine,alanine, with a content of 5.40%, accounted for 35.84% percent of total amino acid content, while the content of eight essential amino acid accounting for 42.79% in total amino acids for human being was 6.45% in whole muscle.
