摘要
对茶叶酶研究方法、动态及成果进行了概述.随着研究技术、思路的拓宽,茶叶酶研究与应用领域已从内源酶扩展到外源酶,从酶的性状表现追踪到遗传特性,从酶活性的环境调控措施深入到化学干预,从自然状态下酶的利用发展到经过加工处理后酶的应用阶段.
Researches on enzymes of tea in terms of the methods and their applications as well as the trends were reviewed and discussed. Recently, the methods, technical or ideological, have been so much developed and extended that the progress has been speeding in exploration and utilization of both internal and external enzymes, in inquisition into the relationships between genetic characters and enzyme behaviours, in chemical and environmental regulation of enzymatic activities and in extension of the utilization of enzymes in the natural state to that of specially treated and improved ones.
