摘要
成书于元代的《饮膳正要》中的“挂面”,被认为是记载挂面最早的文献。但敦煌文献记载了一种被称作“须面”的食物,经过研究,认为这应当是中国最早的挂面,它比《饮膳正要》的记载早了好几百年。
Written in the Yuan Dynasty,《Yin Can Zheng Yao》which noted down 'Fine Dried Noodles' is usually regarded as the earliest book recording fine dried noodles. However, a kind of food called 'Beard-like Noodles' has been recorded in Dunhuang Literature. The study shows that they should be considered to be the earliest fine dried noodles, several hundred years earlier than what is recorded in 《Yin Can Zheng
