敦煌文献中的“须面”

“Beard-like Noodles” Recorded in Dunhuang Literature

成书于元代的《饮膳正要》中的“挂面”,被认为是记载挂面最早的文献。但敦煌文献记载了一种被称作“须面”的食物,经过研究,认为这应当是中国最早的挂面,它比《饮膳正要》的记载早了好几百年。

Written in the Yuan Dynasty,《Yin Can Zheng Yao》which noted down 'Fine Dried Noodles' is usually regarded as the earliest book recording fine dried noodles. However, a kind of food called 'Beard-like Noodles' has been recorded in Dunhuang Literature.
