摘要
本文在介绍壳聚糖结构与理化性质的基础上,重点讨论了壳聚糖在体内的水解、消化吸收及其生理活性和疗效作用,提出了壳聚糖在保健食品中的应用和质量控制指标。
Based on the description of the structure and physico-chemical properties of chitosan, the hydrolysis、 digestion and absorption in human body、 its physiological activities and curative effect were discussed emphatically and application of chitosan in functional foods and its qualitative control index were also included in this paper.
