摘要
实验采用原生质体紫外诱变方法 ,对啤酒酵母进行处理 ,然后用双乙酰梯度板检测突变株还原双乙酰能力 ,通过实验室摇瓶发酵 ,得到一株还原双乙酰能力强的菌株。
This experiment used the technique of protoplast mutagenization with UV to deal with Saccharomyces cerevisiae.Several mutagenized strains which have the ability of reducing diacety.After fermentation in shaking flasks we analyzed the content of diacetyl in the Fermented liquid,and we have got better mutagenization strains.
