摘要 菊粉低聚糖是一种功能性低聚糖 ,可以洋姜 ,菊苣等为原料 ,由菊粉内切酶酶解而生产 ,工艺简单 ,成本低。本文简单介绍了菊粉低聚糖的生产意义 ,基本生产过程 ,产物分析方法 ,及国内外开发现状 ;重点介绍了生产过程中技术新进展 ,主要包括原料的预处理 ,菌种的选用 ,酶的固定化 ,细胞的固定化 。 Inulooligosaccharide is one kind of functional fructooligosaccharide.It can be made in jerusalem artichoke,chiory etc by the enzymatic degradtion.The process is simple,and it has low cost.This article introduces briefly the manufaction value,basic process,product analytical methods and its present situation in the world.New technology advances are manily introduced,including the pretreatment,selection of microbe,imobilization of enzyme,imobilization of cell,and effect of the substrate.
