摘要 介绍了酶技术在食品工业生产中各主要领域的应用和一些最新进展 ,涉及到的领域有制糖、饮料。 In the article,the application of enzyme in the food industry and some of its latest advancements are introduced.The fields included are sugar manufacture, beverage,milk production and baking.
