摘要
主要研究从生姜中提取出汁液 ,并与苹果汁调配 ,结合使用复合香味稳定剂 ,再添加到搅拌型酸奶中制成具有保健作用的生姜酸奶的生产工艺。并对生姜的添加量及防止褐变进行了研究 ,确定了最佳配方 。
The article mainly introduces the process of healthful ginger yoghurt,which includes the extraction of ginger juice,the concoct of ginger juice and apple juice,the adding of composite stabilizer,and the blending with the yoghurt.It also studies the addition and browning-inhibiting of ginger juice,optimizes the formula and establishes its quality standard.
