摘要
研究几种单一促溶剂及复合促溶剂的促溶效果 ,优化了复合促溶剂配比 ,得出其最佳值为NaCl 2 % (W /W )、乙醇 1% (V/V )、葡萄糖 1% (W /W )。以此促溶啤酒废酵母 ,其抽提液氨基氮含量比传统促溶剂 (NaCl)提高了 9.6 % ,收率提高了 8% ,而自溶时间则缩短了 12h。
The autolysis effect of several single promoters and complex promoter were studied. The optimal proportion of the complex promoter (sodium chloride 2%(W/W)/ethanol 1%(V/V)/glucose 1%(W/W)) was obtained. Compared with traditional promoter (sodium chloride), the efficiency of autolysis of spent brewer's yeast in the presence of complex promoter increased by 9.6%(AN of extract), 8%(AN yield of extract), and the time of autolysis reduced 12h.
