摘要
根据国内外近期研究成果,简要介绍了菊芋的生长习性及菊芋块茎的主要成分,比较系统地介绍了菊芋资源的开发现状,其中包括菊芋粉、菊芋汁、菊糖、果糖和低聚果糖等主要菊芋制品的生产、功能性及其在食品工业中的应用。
This paper,based on the recent research results from the world,introduced the growing property of Jerusalem artichoke and the main components of its tuber in brief.The present situation of Jerusalem artichoke resource's development was also described systematically,including the production,function and application in food industry of Jerusalem artichoke powder,Jerusalem artichoke juice,inulin,fructose,fructooligosaccharide and so on.
