菊芋资源的开发利用

THE DEVELOPMENT AND UTILIZATION OF Jerusalem artichoke RESOURCE

根据国内外近期研究成果,简要介绍了菊芋的生长习性及菊芋块茎的主要成分,比较系统地介绍了菊芋资源的开发现状,其中包括菊芋粉、菊芋汁、菊糖、果糖和低聚果糖等主要菊芋制品的生产、功能性及其在食品工业中的应用。

This paper,based on the recent research results from the world,introduced the growing property of Jerusalem artichoke and the main components of its tuber in brief.The present situation of Jerusalem artichoke resource's development was also described systematically,including the production,function and application in food industry of Jerusalem artichoke powder,Jerusalem artichoke juice,inulin,fructose,fructooligosaccharide and so on.
