甘氨酸锌相对分子质量与锌含量标准的研讨

Discuss for M_r(Zn(Gly)_2) and the Standard Zn Content in Zinc Glycinate

甘氨酸锌是新一代氨基酸系列补锌产品 ,在国标GB 2 760 -1 996食品添加剂卫生标准中被确定为食品营养强化剂 ,其备注中对甘氨酸锌中的锌含量标注为 3 1 8%。作者通过对甘氨酸锌产品的研制和结构分析认为此值有误 ,应予更正。含结晶水的甘氨酸锌相对分子质量为 2 3 1 5 1 ,锌含量为 2 8 2 4% ;不含结晶水的甘氨酸锌相对分子质量为 2 1 3 5 1 ,锌含量为 3 0 62 %。

The zinc glycinate is the new generation supply zinc product of the amino acid series.In national standard 'GB 2760-1996 Hygienic Standards for Uses of Food Additive' ,it had been determined for food nutrition reinforced dose.But in its remarks,the Zn content in zinc glycinate is 31 8%.Through product developing and structural analysis for zinc glycinate,the results show that this valuehas mistake.The right values see as below: M r(Zn(Gly) 2·H 2O)=231 51,the Zn content in Zn(Gly) 2·H 2O is 28 24%;M r(Zn(Gly) 2)=213 51,the Zn content in Zn(Gly) 2 is 30 62%.
