摘要
为解决乳糖不耐症,采用两种乳糖酶分解牛乳中的乳糖,并测试其酶解率,同时对低乳糖乳的生产工艺进行了探讨。实验结果表明,对于液体乳糖酶:在30℃下,用量为0.010%、0.025%、0.050%时经过4、2和1h后可将还原乳中的乳糖水解到70%左右;在低温4℃下、0.025%的液体酶经过12h后也能达到同样的效果。对于固体酶,在39℃下,酶的添加量为0.060%、0.090%、0.120%时,分别经过3.5、3和2h的振荡酶解后,乳糖的水解率也可达到70%以上。
According to the mechanism of the lactose' s hydrolyze in the human being and aim ing at lactose intolerance in many people,we use two kinds of lactase:Liquid and solid lactase to hyd rolyze the lactose in the milk.Other wise,we determine the efficiency of hydro lyzing,study the process for the man ufacture of low -lactose milk.The li quid lac-tase which content is 0.010%,0.025%and 0.050%in milk when the hydrolysi s time is 4h,2h,1h respectively at 30℃,or 12h at 4℃will hydrolyze 70%lactose.The soli d lactase which content is 0.060%,0.090%,0.120%in milk when the hydrolysis time is 3.5h,3h,2h respe ctively at 39℃will hydrolyze 70%lactose.
