摘要
金雀花素(5,7,4'-三羟基异黄酮,genistein,也称之为染料木素)是一种植物雌激素,目前发现在豆类作物中含量最高。近十几年的研究表明,金雀花素在防治多种癌症和疾病方面具有非常大的潜力。本文选择国内市场上常见大豆类制品作为实验材料,从中提取出金雀花素并进行分离纯化,测定其含量,以大豆作为基准,确定了在上述豆制品中,豆腐金雀花素含量比例为83.44%,而豆芽和醋大豆中分别为65.60%和47.67%。这表明,经过简单加工的大豆制品中金雀花素损失最少,因此豆腐、豆芽等大豆制品可作为中老年人群日常补充植物雌激素的推荐食品。
Genistein(Isoflavone,4,5,7-trihydroxy)is a kind of phytohormone,which is fo und with the highest content in soybean and the related products.According to results of recent researches,this oestrogen can be used in t he treat-ment of a great variety of cancers and many diseases.In this experiment,s oybean,soy curd,soybean sprout,and acetified soybean are used and after the extraction of raw mixture from th em,genistein is separated through p olyamide thin -layer chromatography(TLC)respectively.The result reveals th at there is more genistein in soy curd(83.44%of soybean' s content )than soybean sprout (65.60%)and acetified soybean(47.67%).So,we recommend the ingestion of soybean and soybean products simply processed.
