摘要
本文以东北特产龙丰果为例,进行了果蔬保鲜贮藏的传热传质数学模拟及实验研究。首先建立球状果蔬真空超冰温保鲜贮藏传热和传质过程的数学和物理模型,编制程序进行数值模拟计算;其次对贮藏过程进行实验研究;最后将数值模拟与实验结果进行对比分析,得到龙丰果真空超冰温储藏的最佳技术参数,对这一技术的推广具有重要意义。
Taking Longfeng fruit in Northeast China as an example in this article,preservation and storage of fruit and vegetable were simulated on the heat transfer and mass transfer and experimentally studied.Firstly,a mathematical and physical model of heat transfer and mass transfer’s process in vacuum ultra-ice temperature storage of spherical fruits and vegetables is established,programming for numerical simulation.Secondly,the process of storage was studied experimentally.Finally,the numerical simulation and experimental results are compared and analyzed to obtain the best technical parameters of vacuum ultra-ice temperature storage of Longfeng fruit,which is great significance to the popularization of this technology.
