油菜种子蛋白质溶出率及蛋白质组分分析

Analysis of solubility and ingredients of rapeseed protein

研究了油菜种子蛋白质的溶出条件 ,发现选用Na2 HPO4-NaOH ,pH11 4缓冲液 ,蛋白质溶出率达 94%以上。用 80 %甲醇脱色 ,可以将油菜种子中大部分干扰物质脱去 ,要达到完全去掉干扰物质则以反抽法最佳 ,且得到的一些组份溶解性良好。

The extracting conditions of rapeseed protein were studied.It was found that when Na 2HPO 4-NaOH buffer(pH=11.4) was used,the dissoluble ratio of rapeseed protein was over 94?%.Most of interfering materials could be excluded with 80?% methanol as decoloring agent.The countercurrent extraction was the best way to exclude the interfering materials and some of these ingredients extracted were well dissolved.
